Skinless, boneless chicken breasts are the darling of cooks looking to cut fat and calories. This recipe scores, thanks to a choice of easy sauces. In a nonstick 12-inch skillet, heat 1 teaspoon vegetable oil over medium heat until very hot. Add 4 small skinless, boneless chicken breast halves (4 to 5 ounces each). Cook until chicken is golden brown and loses its pink color throughout or for 4 to 5 minutes per side. Remove chicken from pan and reduce heat to medium, then make one of the following sauces.
